Several people have asked about the recipe I use for blueberry jam - so here it is.
This will make about 6 half pint jars. It's the most popular of the jams I make - and it's great for gifts.
This will make about 6 half pint jars. It's the most popular of the jams I make - and it's great for gifts.
Ingredients
- 4 1/2 C fresh blueberries
- 1 package regular powdered fruit pectin
- 5 cups sugar
- juice from one large lime
- 1/4 teaspoon drien orange rind
Directions
1. Combine berries, lime juice, dried orange peel and pectin in a large saucepan2. Bring to a boil over high heat - stirring continually.
3. Add sugar all at once. Return to a full, rolling boil and cook, stirring all the time for
a minute or so.
4. Ladle into hot jam into hot jars - leaving about 1/4 inch head room.
5. Wipe rim of jars & screw on lids - not over tight.
6. Process in boiling water for 10 minutes.
You can also just grate the lime peel and use it rather than orange peel - or you can add a bit of orange liquor.
